A TREATISE ON THE INDIAN DAIRY INDUSTRY
Milk is India’s number one farm produce, both in terms of production & value. Besides being a source of liquidity and insurance against crop failure, milk is the only produce through which the farmer realises 60-70 percent of consumer price, against 20 per cent or so for fruits & vegetables. One of the reason for this is the image problem experienced by milk, which is perhaps related to the absence of authentic information on the sector. This is the gap that dairy india has been striving to bridge through to various editions
Out of the total milk production of 94. Million tonnes in 2005, 77 percent ( 73.1 million tonnes ) was sold as liquid milk, and the balance 23 percent ( 21.4 million tonnes) was converted to products.
The organised industry handled 18 percent ( 17 million tonnes) of the milk, while the private dairies and unorganised players handled to 36 percent (34.5 million tonnes) and 46 per cent ( 43 million tonnes) was retained in the rural areas.
